Tasting Notes
Aromas of pineapple, citrus, with dandelion and rose petals and hints of oak. This wine is full and complex on the palate, with nice viscosity and weight, balanced by the bright acidity in the middle. There's a burst of pineapple, Golden Delicious apple, and lemon, followed by spearmint, allspice, and lemongrass on the very long finish.
Vineyard Notes
From a 1.52-acre block of Dijon 76 & 96 clones planted in 1994, at an elevation of 700 feet, in Peavine soils.
Winemaker Notes
The grapes were harvested by hand and sorted in the field, and again on the crush pad. The fruit was whole cluster pressed and the juice settled overnight before being racked to stainless barrels for primary fermentation. The wine was racked and returned to barrel at dryness, discarding the heavy lees and aged on the fine lees. The barrels for aging were 25% new, 50% neutral, and the remaining in stainless, undergoing partial malolactic fermentation. After 10 months, the wine was bottled and held until release.

Serve at cellar temperature with roasted chicken, crab cakes, halibut in cream sauce, risotto, salmon with lemon sauce, sauteed scallops, or winter squash.
