Vineyard Notes
The grapes for this wine are from a 0.9 acre block of Pinot Gris vines planted in 1986, at 870 vines/acre. This site has sedimentary Peavine soil and a southeast facing slope, at roughly 790' elevation.
Winemaker Notes
The grapes were harvested by hand, and whole cluster pressed. The juice settled overnight, and was racked to a stainless tank to ferment. After fermentation was complete, the wine was racked off the heavy lees and aged in stainless until bottling. To sparkle, the wine was transferred to a high pressure tank, chilled, and force carbonated.
