Wine Profile
Tasting Notes
Fresh aromas of lemon, brioche, and almond. On the palate, the ample acidity and bright fruit mingle with flavors of green apple, more lemon, and a chalky minerality. Delicate bubbles and a long finish.
Production Notes
Chardonnay 53%, Pinot Blanc 47%
Winemaker Notes
The grapes were harvested by hand, sorted, and whole cluster pressed. The juice was settled overnight, and racked to stainless for primary fermentation. After fermentation was complete, the wine was racked off the heavy lees and aged until it was bottled under cap the following autumn. The wine aged in tirage bins for 10 months and disgorged in September 2018.
Food Pairing Notes
Caviar, oysters, Parmesan cheese, smoked fish, fried food, or white truffles
