Wine Profile
Tasting Notes
This dark ruby red wine is brimming with earthy, fruity, and spicy aromas of dried cranberries, maraschino cherries, cinnamon, and anise. On the palate, the youthful tannins and medium body reveal more cranberry, bell pepper, and cracked peppercorns with a very long finish.
Winemaker Notes
The grapes were harvested by hand, sorted, and destemmed into two 1-ton fermenters for a 6-day cold soak. Once fermentation began, the must was punched down and pumped over twice daily and pressed at dryness. After settling, the wine was racked to 20% new French oak barrels and aged for 18 months.
Food Pairing Notes
This wine will cellar for 10-12 years; decant if consumed young. Serve with braised beef, roasted lamb, hard cheese, or Italian cuisine.
