2015 Brut, Zero Dosage
Like the name sounds, this is highly mineral driven, not given any dosage. The nose brings some nice brioche and wet stone tones. Bright and effusive, showing nice salinity, the wine yields some rich brioche, salted almond, and a touch of marzipan. Drink 2017-2022- 90

Wine Profile
Tasting Notes
Fresh aromas of lemon pith, tart apple, cucumber, granite, with a whisper of mint and a light yeastiness. On the palate, this wine is very dry and crisp, with hints of grapefruit, integrated, balanced acidity, a burst of pineapple in the mid palate, and a fine bead that has a smoothing presence.
Production Notes
Chardonnay 44%, Pinot Noir 34%, Pinot Meunier 22%
Winemaker Notes
The grapes were harvested by hand and whole cluster pressed. The juice settled overnight, then was racked to a stainless tank for cool fermentation. When fermentation was complete, the wine aged on the fine lees until bottling the following winter. The wine was bottled under cap, and aged in tirage bins until it was disgorged in September 2017 and finished without dosage.

Oysters, fried foods, eggs, caviar, shellfish, smoked fish, or sushi
